About the position
Χειμερινή θέση στην κουζίνα του Dorfstadl στο Kappl. Η επιχείρηση περιλαμβάνει εστιατόριο για το βράδυ και προσφορά πίτσας και για εξωτερικούς επισκέπτες· ανάλογα με τον ρόλο, περιλαμβάνεται και εργασία στο πρωινό.
Tasks
Διεύθυνση της κουζίνας σε επιχειρησιακό επίπεδο και οργάνωση των διαδικασιών. Καθοδήγηση, συντονισμός και υποστήριξη της ομάδας· σχεδιασμός του mise en place, διασφάλιση των προτύπων ποιότητας και υγιεινής καθώς και της προσεκτικής διαχείρισης των τροφίμων. Στενή συνεργασία με το σέρβις και συμμετοχή στο μαγείρεμα κατά την καθημερινή λειτουργία. Από κοινού εξέλιξη του καθορισμένου μενού· κατάλληλες αλλαγές είναι εφικτές και κατά τη διάρκεια της σεζόν.
Requirements
Ολοκληρωμένη εκπαίδευση σεφ και πολυετής επαγγελματική εμπειρία, ιδανικά ως sous chef ή διευθυντής κουζίνας. Εμπειρία στη διοίκηση ομάδας, αίσθημα ευθύνης, αυτόνομη, οργανωμένη και προσανατολισμένη στις λύσεις εργασιακή νοοτροπία. Απαίτηση ποιότητας, αγάπη για το μαγείρεμα, ομαδικό πνεύμα και αξιοπιστία· διατήρηση της εποπτείας ακόμη και σε έντονο ρυθμό εργασίας.
