Tasks
Διαχειρίζεσαι αυτόνομα τη θέση garde-manger και είσαι υπεύθυνος/η για την κρύα κουζίνα. Προετοιμάζεις ορεκτικά, σαλάτες, κρύα συστατικά και άλλα πιάτα της σειράς μενού μας. Φροντίζεις για μια μοντέρνα, δημιουργική και σταθερά υψηλής ποιότητας παρουσίαση των φαγητών μας. Εκτελείς αυτόνομα το καθημερινό σου mise-en-place. Εργάζεσαι με φρέσκα, υψηλής ποιότητας και κατά το δυνατόν τοπικά και εποχικά προϊόντα. Ως πλήρης chef de partie μπορείς, εφόσον χρειαστεί, να αναλάβεις και άλλες θέσεις της κουζίνας μας. Υποστηρίζεις ευέλικτα όπου οι ικανότητές σου χρειάζονται στην ομάδα κουζίνας. Συνεργάζεσαι στενά με τον σεφ και τους συναδέλφους σου και φροντίζεις για την ομαλή λειτουργία της κουζίνας. Συνεισφέρεις δικές σου ιδέες για πιάτα, συστατικά και παρουσιάσεις. Ελέγχεις το απόθεμα και την ποιότητα προϊόντων στον τομέα σου και συντονίζεις τις παραγγελίες με τον σεφ. Χειρίζεσαι υπεύθυνα και οικονομικά τα τρόφιμα και τα εμπορεύματα. Φροντίζεις για την τάξη και την καθαριότητα στη θέση σου και τηρείς τα πρότυπα υγιεινής και HACCP μας.
Requirements
Ολοκληρωμένη εκπαίδευση ως μάγειρας ή αντίστοιχη στέρεη επαγγελματική εμπειρία Εμπειρία ως garde manger ή σε παρόμοια θέση κουζίνας Η επαγγελματική ευελιξία να αναλαμβάνεις, εκτός από την κρύα κουζίνα, και άλλες θέσεις chef de partie Αγάπη για ορεκτικά, κρύα κουζίνα και μοντέρνα παρουσίαση Σίγουρη μαγειρική τέχνη και καλή αίσθηση γεύσης και εμφάνισης Ενδιαφέρον για τοπικά και εποχικά προϊόντα Συνείδηση ποιότητας και υπεύθυνη διαχείριση των τροφίμων Καθαρός, οργανωμένος και αυτόνομος τρόπος εργασίας Ομαδικό πνεύμα, αξιοπιστία και ευελιξία Δημιουργικότητα και διάθεση να συνεισφέρεις δικές σου ιδέες Επαγγελματική εμπειρία: 5 χρόνια.
